Dom Pérignon embodies the exceptional effervescence of Champagne. For nearly twenty years, Richard GEOFFROY, Chef de Cave, has ensured its excellence. Nicknamed the Pope of the Ethereal Bubble, this celestial maestro masters the art of marrying Chardonnay and Pinot Noir in delicate harmony. Each vintage emerges from a unique assemblage, where style and terroir express themselves in perfect symbiosis. While speculation surrounds this cuvée, it is quality that forges its reputation. Necessarily vintage-dated, Dom Pérignon remains legendary. It only sees the light of day in exceptional years, its demand equalling its rarity. Only thirty-nine vintages have been born in the cellars of Hautvilliers, the last in 2006. Only exceptional vintages are retained. This champagne is the object of worldwide covetousness. Symbol of French luxury, it is willingly tasted outside of meals, although with time, it reveals all its splendour in gastronomy. The legacy of a visionary monk The history of Dom Pérignon merges with that of champagne itself. Pierre Pérignon (1638-1715), a Benedictine monk, is considered the father of this effervescence. Legend attributes to him the importation of the sparkling method from Limoux to the Marne. Within the vineyards of the Hautvilliers abbey, he strove to create the best wine in the world. Forty-seven years of his life devoted to researching vinification techniques. Pierre Pérignon understood very early the importance of meticulously selecting grape varieties. He then devoted himself to blending them to extract harmony. It is said that he tasted each grape berry. It was by corking his bottles with beeswax that he discovered the méthode champenoise, thus enabling the second fermentation in bottle. Moët & Chandon, architect of the legend Moët & Chandon inscribes its name in the great history of Champagne. Founded in 1743, this house belongs today to the LVMH group under the direction of Bernard Arnauld. Two centuries after the discoveries of Dom Pérignon, Moët & Chandon created a special cuvée. Objective: to market a champagne that had aged more than ten years in the cellar. Thus was reborn the modern legend of Dom Pérignon, this exceptional vintage recognised among the greatest in the world. The house keeps its annual production secret, thus preserving its mystery.
